Nothing says it officially fall like grabbing a pumpkin spice latte and pumpkin scone from Starbucks. I love starting off the cooler months on full pumpkin mode. The best part is that you can also make those same pumpkin scones from Starbucks at home! Let me show you how to get your pumpkin fix with this easy Starbucks pumpkin scone recipe.
I have a tradition that when the kids start school, I grab a little Starbucks treat after drop off. The past few years I have grabbed a pumpkin scone to go with my drink. I love the scones and it’s the perfect transition from summer to fall.
Of course, I love being able to have Starbucks at home too. So I re-created their famous pumpkin scones to have any time I want!
What is a pumpkin scone?
A scone is a flaky type of biscuit that is normally served for breakfast with coffee. They can be sweet or savory and can sometimes be a side dish to a meal.
These pumpkin scones are the sweet variety and pair perfectly with a hot cup of coffee. They also taste just like the Starbucks version too! I added cream cheese frosting to mine but I will share the original powdered sugar frosting that Starbucks uses on theirs.
When does Starbucks sell pumpkin scones?
Starbucks starts to sell their pumpkin scones sometime around the end of August or beginning of September. It seems that the time fluctuates on when they will debut their fall line up. That’s ok. You can make it year round with this easy Starbucks copycat pumpkin scone recipe!
Starbucks pumpkin scones ingredients
- 10 tbsp butter
- 2 cups all purpose flour
- 1/2 cup light brown sugar
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tsp pumpkin spice
- 1 egg
- 1/3 cup heavy cream
- 1/2 cup canned pumpkin
- 1 1/2 tsp vanilla extract
- 1/2 cup chopped pecans, optional
- 2 oz cream cheese, at room temperature
- 3/4 cup powdered sugar
- 1/2 tsp vanilla extract
Butter – You want to use cold, unsalted butter for these pumpkin scones. The cold butter gets cut into the flour and makes the scones flaky and delicious. If you only have salted butter, omit the salt in the recipe.
Pumpkin spice – You can either grab a bottle of pumpkin pie spice from the store or make your own! Homemade pumpkin pie spice is fun to make and great to have on hand for the fall months.
Heavy cream – The heavy creamy helps bind the scone together and create that yummy flaky texture. You can use regular milk here as well. If you want to make them dairy-free, use coconut cream or almond milk.
Pumpkin – Grab a can of pumpkin puree from your baking aisle for these scones. You only need 1/2 a cup so make sure to save the rest for some pumpkin syrup or pumpkin butter!
Are Starbucks pumpkin scones vegan?
No, the scones that Starbucks sells are not vegan. The pumpkin scones contain butter, milk and eggs – all things that are vegan approved. The good news is that you can make these pumpkin scones vegan by switching out the ingredients a bit! Use coconut oil, coconut cream and a flax egg to keep these scones vegan.
How to make copycat pumpkin scones
Once you have all your ingredients to make these copycat Starbucks pumpkin scones, you will also need to grab:
- food processor
- a small mixing bowl
- a large mixing bowl
- wooden spatula or spoon
- rolling pin
- baking sheet
- parchment paper or silicone baking mat
- whisk or fork
Step 1: Add the flour, brown sugar, baking powder, salt, and pumpkin pie spice to the bowl of a food processor. Pulse to combine. Add the cold butter. Pulse again until the butter is the size of peas— about 10 pulses. You can also use a large mixing bowl and cut the butter in with a pastry cutter as well.
Step 2: In a small bowl, whisk together the egg, cream, vanilla, and pumpkin puree until combined.
Step 3: Transfer the butter/flour mixture to large bowl. Add the wet ingredients and chopped pecans (optional). Stir until no large clumps of flour remain.
Note: This is easiest with a dough hook but it can also be done with a wooden spoon or your hands.
Step 4: Once the dough is fully combined (it will look dry, that’s okay!), transfer it onto a floured surface and pat it into a circle using your hands— the dough should be 1 inch thick and the circle should be 8 inches in diameter.
Step 5: Cut the dough into 8 triangles and transfer to a parchment lined baking sheet.
Note: To ensure evenly sized triangles, begin by cutting the dough in half. Then cut each half in half again (now you have 4 quarters). Then cut each quarter in half diagonally from the center of the circle. A pizza cutter works great for this.
Step 6: Bake in a preheated 425F oven for 16-20 minutes, or until the scones are lightly browned and puffed.
Step 7: To make the icing, combine all of the ingredients in a small bowl and whisk until no large lumps of powdered sugar remain. Allow the scones to fully cool before icing or the icing will melt off the scones.
Classic Starbucks glaze
There are 2 different glazes on the Starbucks scones. To make these pumpkin scones with the classic Starbucks glaze you will need:
- 1 cup powdered sugar + 2 tablespoons milk
- 1 cup powdered sugar + 1 teaspoon pumpkin pie spice + 2 tablespoons milk
Combine the first glaze in a small bowl and apply over the whole scone.
Combine the second glaze in another small bowl and drizzle it over the first glaze.
How to store pumpkin scones
Once the scones are cooled and frosted, place them in an airtight container in the fridge. When you are ready to eat one, place it in the microwave for 30 seconds to heat through. You can leave them on the counter but I find they stay fresher in the fridge.
Can you freeze Starbucks pumpkin scones?
These are totally freezer friendly! I suggest freezing them before you frost them. Allow the scones to cool after cooking and place them in a Ziplock bag in the fridge. To thaw, place in the fridge or on the counter and allow to thaw. Zap in the microwave right before eating.
