Are you looking for something to eat while you sip your DIY coffee in the morning? I’m not a big breakfast eater. I am not sure if it’s because of eating on the fly with kids or because I just don’t feel hungry until around noon. Either way, this Strawberry Quick Bread has helped me to slow down and eat something in the morning even while I am running around like a chicken with my head cut off.
One of my favorite things to do with the kids is bake. They love to get involved and it’s always fun to bake something fun with them. This strawberry quick bread recipe is the best of both worlds – easy recipe that even the kids will enjoy making! Plus it’s pretty dang delicious and the perfect way to use up fresh strawberries.
What is Strawberry Quick Bread?
This strawberry quick bread recipe is just one type of quick bread recipe you can make. Quick breads cover a variety of ranges from biscuits and scones to muffins and loaves. They are made from a batter.
The difference between other breads and quick breads is that they have to be baked or cooked immediately after being mixed. Hence the word “quick.” Most of the time they don’t use yeast or have any rise time either.
Strawberry Quick Bread Ingredients
- 2 cups of flour plus some
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 cup of sugar
- 1/4 cup of vegetable oil
- 1 cup of half n half
- 2 large eggs
- 1 Tablespoon of Vanilla
- 1/4 teaspoon of lemon juice
- 1 cup of fresh diced Strawberries
- 1 or 2 large Strawberries – sliced – for top of bread
Icing Ingredients
- 1 cup of Powdered Sugar
- 1/4 teaspoon of Vanilla
- 1 teaspoon of butter – softened
- 1 – 2 teaspoon of milk
Flour, baking soda, baking powder, and sugar – These are probably the most common ingredients in baking. Feel free to use your favorite type and brand of each.
Vegetable oil – You can use vegetable oil, canola oil, olive oil or any other similar oil that you have on hand.
Half n half – This keeps the bread from becoming dry. You can also use milk, heavy cream or buttermilk.
Strawberries – You need fresh strawberries for this quick bread recipe. The strawberries go in the batter and on top of the bread.
Powdered sugar – This is used to make the drizzle that goes on top of the bread.
Vanilla – Extract helps flavor the icing that goes on top.
Milk – Use the milk to thin out the icing to your desired consistency. You need it to be able to drizzle over top the cooled bread.
How to Make Strawberry Quick Bread
This bread is quick and easy to make. Just follow the simple steps below to make your own!
Step 1 Prep
First, heat the oven to 350 degrees. Grease and flour a 9 X 5 loaf pan with butter, and flour. (Metal pans work better to bake bread)
Step 2 Mix Dry Ingredients
In a large bowl, whisk together the flour, soda, salt, and sugar, ad mix well.
Step 3 Mix Wet Ingredients
In a separate bowl, mix the oil, half n half, eggs, Vanilla, and lemon juice, and stir well to blend.
Step 4 Blend All Ingredients
Add the oil/egg mixture to the flour mixture, and mix until well blended. Sprinkle a heaping Tablespoon of sugar over the diced strawberries, and stir.
Sprinkle a heaping Tablespoon of Flour over the berries, and toss the berries in the flour. Fold the berries into the batter, and pour the batter in the loaf pan.
Step 5 Add Some Pizazz
Slice one or two Strawberries, and sprinkle sugar over the berries, coating them in sugar. Sprinkle a heaping Tablespoon of flour over the sliced strawberries, and toss to coat. Place the berries on top of the bread in a decorative pattern (see photos).
Step 6 Bake
Bake the bread for 50 – 60 minutes, or until a toothpick inserted in the center comes out clean. The bread should be golden brown. If the bread starts to get too dark, or too browned, loosely place a piece of aluminum foil over the top, like a tent, but not tightly on the pan (fold a piece of foil in half, and place it over the top of the pan, but not against the bread).
Step 7 Cool
When the bread is baked, remove from the oven to a wire rack, and cool for 10 minutes, then remove from the pan, and continue to cool the bread on the wire rack.
Step 8 Make Icing
When bread is cooled completely, make the icing.
- Mix the butter and vanilla together until smooth.
- Add the powdered sugar and stir, making sure all lumps are smoothed out.
- Add the milk a little at a time until the icing is smooth, and creamy.
- Ice the bread, and serve.

How to Store Leftovers
The best way to store any quick bread is to store it so it doesn’t get dried out. To help them maintain their flavor and stay moist as long as possible, you will need two things: a sealable container or ziplock bag and two paper towels.
Store your quick breads in a sealed container or a ziplock bag in a single layer. Line the bottom with a paper towel and then place a paper towel on the top of the quick bread.
Can You Freeze It
Yes, you can freeze your quick bread. In fact, you can keep it fresh for up to 3-months in the freezer. Simply store them in a freezer bag and place them in the freezer.
When you are ready to eat your frozen quick bread, let it warm to room temperature then plop it in the oven to warm up for a few minutes.
