Eggplant Parmesan is one of those recipes that sounds really hard but is actually simple to make. And delicious. I remember my grandma would make this and we would creep over and steal eggplant slices while she was busy frying up more. Now that Im older (and wiser? I wish. haha!) I realize that she knew we were snacking but let us think we were being sneaky. So not only does the recipe bring back great memories its quick and easy.. and delicious.
Shredded Parmesan cheese
After you cut your eggplant, boil your pasta and set it aside.
Layer pasta, sauce, cheese, eggplant and more cheese.
Who doesn’t love a recipe that uses double cheese? Ok, maybe the extra cheese is my special touch.. but still! (Also, just a little side note.. I love the Kraft shredded parm, its blows the old crumbly parm out of the water.) Pretty easy huh? Your totally thinking about making it now right? I knew it. 🙂 ha!
