I love fall. I love that it gets cooler and the leaves start to change. I love that I can wear a coat and cute boots. More importantly I love the food of fall. There is pumpkin everything, apple pies, turkey, candy.. nom nom nom. So when our grocery store had Jonagold apples on sale this week I bought some.. ok I bought a lot. And then I went back the next day and bought more. I needed some new apple recipes and one of my friends told me to bake oatmeal in an apple. Genius! Its the perfect fall breakfast, and so easy too! It has officially been added to our easy homemade recipe category!
Ingredients:
- Apple
- Quick oats
- Brown sugar
- Butter
Core your apple. [I used a knife and a fork to dig it out.] Add some butter and brown sugar to the bottom. Fill the apple with the instant oatmeal. Add another big slab of butter and cover that with more brown sugar. Microwave for 3 minutes. Let cool slightly and enjoy!
The juices from the apple cook the oatmeal just right. Its heaven.. in an apple! I remember my great grandma would make a version of this as well. She would do apple slices instead of the whole apple. It was equally delicious though. Its fun when you cook or bake something and it brings back happy memories. I loved watching my great grandma cook and the smells from her kitchen are ones that I will never forget.
