Hey friends! Has it started to get hot where you are yet? It’s in the low 90s here and I am SO over it! Already. We spent all day Saturday at the beach though. It was so nice to be able to just sit in the water and be cool. Being pregnant in the summer is for the birds yall! I keep saying I’m going to buy a kiddie pool just for me because I hate being hot. And I know, I know. Why do I live in South Texas if I hate the heat? It’s a question I ask myself every summer.
On the plus side, I love summer foods! The BBQs with cold side salads are my absolute favorite. I think I can live off of pasta salad and be ok. (Actually, I know I can.)
Monday – Cuban chicken quinoa bowls // I once was not a fan of quinoa but now I love it! It’s so versatile and so healthy.
Tuesday – Southwest shrimp salad // I may be drooling over this shrimp salad! It looks delish!
Wednesday – Pineapple pepper chicken kebabs // I love kebabs during the summer! And I say ke-BABS in my heads every time. (Like Barbara Streisand – Babs? Yea, that.)
Thursday – Taco pasta salad // Not even lying when I say this is my new favorite summer salad! It’s so easy and perfect for dinner or as a side.
Friday – leftovers!
Side – Peanut butter crusted sweet potato fries // How fun are these fries? I’m pretty sure my kids would love them!
Dessert – Oreo marshmallow treat brownies // These are a chocolate lovers dream brownie!
Breakfast – Cinnamon crumb zucchini bread // The crumb topping on this bread is amazing! The whole bread is good but the crumb topping just makes it perfection!
