I’m convinced that any day that involves avocados is a great day. If I could, I would eat avocados for breakfast, lunch and dinner. It’s one of my absolute favorite foods to eat and bake with. So if I have them on hand I try to start my day with my favorite green fruit. Avocados for breakfast? It’s like a match made in heaven!
I’ve mentioned before [probably a couple of times] that I’m not a morning person. I like to sleep in and it takes a good smelling pot of coffee to get me up. When I make breakfast it’s quick and easy, and this avocado breakfast sandwich is no exception. I can whip up this sandwich in less then 10 minutes.
To make the sandwich you will need –
- 1 large avocado half or 1 whole small avocado
- 2 pieces of bread (I used rye)
- 2 pieces of your favorite cheese (mine is Swiss!)
- 2 eggs
- 2-4 pieces of bacon
- Spices to taste
I love this sandwich because it comes together so easy. While the bread is toasting and the eggs are cooking I am slicing and dicing the avocado. [Which of course is my favorite part.] When the eggs are done fry up the bacon and mash the avocado. Add the cheese to the warm toast and the spices to the avocado. Layer everything over your toast and viola! The perfect breakfast sammie.
This sandwich is basically a breakfast version of the bacon, avocado Swiss bites I shared awhile ago. [What can I say, I love the avocado, Swiss and bacon combo!] Add an ooey gooey egg and it’s breakfast. An incredibly delicious and relatively healthy breakfast. I mean avocados are full of good nutritional fats that help lower cholesterol and have been said to help with diabetes. [A little fun avocado fact to go with your breakfast.]
I served my open but it would be just as nice with another piece of bread. Maybe some extra avocado too. Who am I kidding? Of course there will be extra avocado!
Avocado Breakfast Sandwich
Ingredients
- 1 large avocado half or 1 whole small avocado
- 2 pieces of bread (I used rye)
- 2 pieces of your favorite cheese (mine is Swiss!)
- 2 eggs
- 2-4 pieces of bacon
- Spices to taste
Instructions
- Toast your bread. Add the cheese on top when its done.
- Cook your egg.
- Peel your avocado and mash it in a bowl. Add your spices.
- After the egg is done, fry your bacon.
- Layer everything together.
- Enjoy!
