Hey yall! Did you enjoy the grocery list that was shared with last weeks menu?? I thought it was such a cool idea to add in! Helps with grocery shopping and planning for sure.
Speaking of plans – we didn’t really have any this weekend. We were just going to take the kids to the park and hang out at home most of Saturday. When I went to let our dogs in, one of them was bleeding pretty bad. We weren’t sure how he got cut his back paw but made a quick trip to the vet. A couple stitches later, some antibiotics, one pink cast and he was good to go home. We spent the rest of the day watching him to make sure he was ok and didn’t rip off his bandage. So much for an uneventful weekend!
But he’s doing fine, loving all the extra attention and treats he getting with his meds. If it’s not the kids, its the dogs! Ok, ok. Enough about my pups.. onto the menu!
Monday – Veggie stuffed lasagna roll-ups // Do you do meatless Monday? Then these lasagna roll-ups are going to be your new favorite! Full of veggies and cheese, they are perfect for a busy weeknight meal.
Tuesday – Thai chopped chicken and quinoa bowls // I have to admit, I am a fully converted quinoa fan. I know, I know! It’s true! These quinoa bowls are calling my name!
Wednesday – Chicken and dumplings soup // Wednesday is the perfect day for a big ole bowl of comforting chicken and dumplings soup, don’t you think??
Thursday – Sausage stuffed manicotti // Pasta lovers will enjoy this easy weeknight meal full of cheesy goodness!
Friday – Chicken and bacon biscuit quesadillas // I’m a huge fan of easy Mexican food recipes that my kids will actually eat. This looks like a winner on all fronts!
Dessert – Almond blueberry coffee cake // A dessert that is acceptable for breakfast? Count me in!
Breakfast – Nutella swirl puffy pancake // Oh I have major love for the puffy pancake! It’s so easy to make and everyone devours it. Now add in Nutella. WIN!
Snack – Pineapple salsa // I would have to double the recipe to make sure everyone else gets to try some. One bowl just for me!
