Ingredients

–ground beef -onion, diced –red bell pepper, diced –garlic, minced – salt/pepper –Rotel  –beef broth or stock –long grain rice –Worcestershire sauce –shredded Cheddar cheese –fresh parsley

In a large skillet, brown ground beef, garlic, salt and pepper over medium heat.

Stir in the garlic, onions and peppers.

Add the beef broth, rice, undrained Rotel, and Worcestershire Sauce to the skillet and stir until well combined.

Boil for 20 minutes until rice is tender and then add cheese.

Garnish with parsley and enjoy!

Store in an airtight container in the fridge.  Freeze the casserole in an airtight container for up to 3 months.
