This is my official goodbye to summer. I am sending it off with an easy homemade recipe and pat on the back. I am so ready for fall to be here. [And cooler weather!] I can’t wait to start sharing pumpkin recipes, fall decor and fall crafts starting next week. I wanted to post them sooner but I guess stores don’t think its fall quite yet because I can’t find a few things I need. So summer, take this triple veggie Alfredo pasta as your going away party – we will see you next year!
I think its a nice [and delicious] way to give summer the boot actually. A pasta full of summer vegetables? Best way to say goodbye. I made this tripe veggie Alfredo pasta with:
- 1/2 butternut squash
- 1 red pepper
- 1 summer squash
- penne pasta
- 1/4 cup heavy whipping cream
- 1/4 cup shredded Parmesan
- 1/4 stick of butter
- 1/4 cup half and half
Chop and saute all your vegetables. Boil your water for your pasta. In another pot, melt and mix all the remaining ingredients. [Half and half, heavy whipping cream, butter and Parmesan.] Let the Alfredo sauce boil and remove from heat. It will thicken once cooled. Drain the pasta and return to pot. Add the veggies and the Aldredo sauce. Toss and coast the pasta. And enjoy!
Lets recap – three veggies, three pots and four milk products later you have an amazing summer dinner. Or a fall dinner since we already said goodbye [farewell, Auf Wiedersehen, adieu] to sweet summertime. I sprinkled some extra Parmesan just to make sure summer knows we are still cool. Its not me summer, its you. I’ve met someone else and they have pumpkins and sweater weather.
