Hello all! Are you still stuffed from Thanksgiving?! Aww good 🙂 I wish we had some turkey leftover because 1.) I love cold turkey sandwiches and 2.) it would make this week’s menu easier. Haha! But mostly because I love turkey sandwiches! (Anyone else agree?)
Our menu this week (although turkey sandwich-less) is still pretty yummy..
Breakfast:
Cereal (wah wah wah.. lazy Monday breakfast)
Hash browns and eggs
Breakfast tacos
Italian omelet
Dinner:
Chicken and bow tie pasta
Stuffed chicken and rice
Brat pot pie
Taco Salad (or maybe nachos..)
Leftovers

Ok.. so I promised a pie recipe. Not just any pie.. the granddaddy of pies. Its a pumpkin chocolate cheesecake pie! {You read that right my friends!} I found this recipe in a Better Homes and Garden magazine a few years ago and thought I would make it to impress my future in-laws. I was nervous it wasnt going to turn out good (Id never made a cheesecake or a pumpkin pie!) but Im happy to report Im one of their favorite daughter in laws! {Totally think the pie helped.. or maybe the fact that I married their son.. or that they only have two daughter in laws.. either way! It worked.. haha!}
I know Thanksgiving is over but this would be great for a Christmas party or a family gathering. It really is an easy pie to make and its delicious.
Pumpkin Chocolate Cheesecake Pie
Recipe from: Better Home and Garden
Ingredients:
12 oz cream cheese
1/4 cup sugar
1 egg
3/4 cup chopped chocolate chips (I used minis)
15 oz can pumpkin
2/3 cup packed brown sugar
2 teaspoons pumpkin pie spice
4 eggs
3/4 cup half and half
2 deep dish pie shells (yes two.. see below)
1. Ingredients – Preheat oven to 450
2. Combine the cream cheese, egg and sugar. Beat until smooth.
3. Pour it into a deep dish pie shell.
4. Mix pumpkin, brown sugar and spice. Mix in the 4 eggs. Slowly add the half and half to the mixture.
Left – Add your chocolate chips on top of the cream cheese layer
Right – Slowly add the pumpkin mixture on top of the chocolate.
Bake for 60 to 65 minutes or until a knife comes out clean.
Left – The ever delicious pumpkin chocolate cheesecake pie
Right – The leftover pumpkin mixture!
This pie has one problem though.. I always have leftover pumpkin pie mix when Im done! I mean enough to make a whole other pie! The past few years I just tossed it because I didnt have an extra pie shell. But this year I bought two shells and ended up with two amazing pies. {Score!} I was basically the hero of Thanksgiving. Haha. Ok maybe not but the pies were a hit and I love making them. 🙂

Ohhh so easy Randee. I cooked the chicken and cubed it. Cooked the pasta. Added some white sauce and tossed it all. Nothing fancy but so yummy!
