Happy Monday, friends! Im sorry for the late menu.. I mean I’ve already eaten breakfast, lunch and dinner for today. Just been one of those days.
I worked on loveables all day and something else thats Im super excited about. Im gunna keep yall in the dark a little longer.. I want it to be perfect. Im going to post these loveables in my shop soon so make sure you stop by and grab your favorite!

I love this idea of planning out meals for the week. Maybe I'll get this organized one day. : ) I'll have to think of some lunch ideas. Here is a breakfast recipe for cornmeal pancakes that changes up the usual pancake just slightly. Enjoy!

You are so organized! One popular lunch here has long been a tomato soup I learned from my Mexican neighbors. So simple… you saute the uncooked soup pasta in some oil until it is a bit golden then pour through a strainer a tomato or 2 (depending on their size) that was pureed with water and a clove of garlic. Add salt to taste and anything else you want to chuck in (veggies and/or meat or nothing at all). I also like to drop in a cube or two of the frozen chopped cilantro that is sold at Trader joe's (or just throw in some fresh cilantro). Since we are now off gluten I made it today with rice and it was still a favorite with the little man!

I know what you mean about lunches. We definitely get into a rut here too. For a while there I was switching it up with some tortilla wraps. I saw a tortilla roll up with a salsa mix that looked good and cold “lunchable” style english muffin pizzas that looked easy and good too on 5 dinners 1 hour blog! 🙂
