I combined my obsession with all things pumpkin with my abnormal love for delicious breakfast foods to create pumpkin pie stuffed french toast. I dont think I’ve told yall how much I love pumpkin. I love anything and everything pumpkin. If it was acceptable to have pumpkins in July.. I’d do it. I love me some pumpkin. [Its a close third to my anchor and cross obsession.] I created an easy homemade recipe using some pumpkin and it came out amazing!
I take that back. Depending on the season pumpkins are my number one most favorite thing.
This recipe is simple to whip up but makes a big statement. You need:
Eggs
Bread
Vanilla
Pureed Pumpkin
Cream Cheese
Pumpkin Pie Spice
Sugar – Granulated and Powdered
Heat your skillet or griddle. Whip your eggs until they are fluffy and add a tablespoon of vanilla. [More or less depending on your taste.] Soak both sides of your bread in the egg mixture and place on your cooking surface. I just my griddle because I can cook more at once. Hollla!
While your toast is cooking, blend your pumpkin puree, pumpkin pie spice, cream cheese and sugar until creamy. [Anyone else’s mouth water when they read creamy pumpkin? Hmm..]
Once both sides of your toast is toasted cooked add some creamy pumpkin pie mix to the middle. [Hmm.. creamy pumpkin.] Put your second piece of french toast on top and cook one minute on each side. Remove from griddle, let cool and sprinkle with powdered sugar.
I can not even begin to describe how delicious this was. We didnt need syrup.. just a little powdered sugar. I was only able to eat one though and that kinda made me sad. I wanted a whole plate-ful but my eyes were bigger then my belly.
I dont think anything says ‘Hello fall!’ like creamy pumpkin squished between french toast. Hmmm.. creamy pumpkin.
