Thanks Samantha! Hatch chilis may be out of season right now but you can easily substitute with jalapenos or something similar.

YES! Oh it was sooo good. Just diced pineapple, hatch peppers, small jalapeno pepper, onion, tomato and a drizzle of lime juice. Heaven!

Hey, y’all! I was one of the lucky friends that got to eat Kelley’s yummy food last weekend! Let me tell y’all, these enchiladas were so delicious! The chicken was moist and tasty while the hatch chilis added some flavor without making it spicy! Oh, and the homemade salsa? Perfect with the enchiladas! Nom nom nom!
