I just added the instant coffee straight up. It gave them a little extra bite. I’m glad they turned out for you! Cookies plus coffee is the best!

Plus, instead of instant coffee (I wasn’t sure if we had to make the coffee first and then add, or just add it straight up) I added some weird milky instant coffee mix from Thailand. When you don’t have the right ingredients, improvise and hope for the best, right? 😀

They came out pretty awesome, a little reminscent of snickerdoodles in taste, crunchy on the outside and soft on the inside. Kinda wish I’d added a dash of cinnamon!
